When we make our 11" and 5.5" sticks, we hang them in sets over our racks to cook/smoke. Afterwards, we cut off the ends and set aside the irregulars, package our products for sale and repackage these cut end pieces and irregulars into 2.5 pound bulk packages. Needless to say, we have a whole bunch of these end piece packages after a week's worth of stick production. This offer is for the mild flavor only.
