POP GEER SMOKER REVIEW
The Totem smokers by Pop Geer are also electric smokers but do not use water. Instead, the unit is a somewhat tight aluminum box which traps the smoke, heat, and moisture from the meat. The smoke and moisture weep out the riveted seams of the unit (I guess by design). I have made 100's of pounds of jerky on this unit and have to tell you this unit makes great jerky. I have never tried anything else in this unit, so I can't comment.
On the other hand, from a jerky standpoint, the unit is extremely messy and dirty. The moisture can't escape fast enough through the seams of the unit. It winds up leaking out the bottom of the unit and onto the floor. While the dog may love it, I don't! I have considered modifications to the unit by putting an additional hole on the top of the unit to get the moisture out, but I'm concerned about maintaining the proper temperature. I believe another heating element might have to be added. As it is, you have to play rack rotation games as the bottom rack will burn to a crisp while the top rack is still raw. This unit clearly isn't designed for a brine soaked jerky. In my opinion, it is in need of some serious design modifications.
